Guess what, I have jack rabbits out here. Haven't seen a jack since I was in high school and we hunted them for the guys that bought them for feeding to their mink. Anyone every ate one of them.

Seen people eat them, does that count?
My understanding is they are tougher and a bit more gamey than a cottontail - which makes sense because of the size and plains diet.

I spotted a jackrabbit while woodchuck hunting a while back. He was out about 150yds, and I let fly with my .22-250 and a 52gr. Sierra HPBT Match bullet. Honest, I walked to it and the fur was still coming down. There wasn't much edible jackrabbit remaining. You definitely don't want to use a benchrest bullet on these critters. What a mess.
