Well I usually get turtles while fishing so...
I always hated cleaning turtles because you cut the head off a big snapper and two days later the body is still thrashing around and you are working a sharp knife into something that is still moving. Here is the answer and it's so slick I didn't believe it till I tried it.
Chop off the head AND the tail, then take an air gun and blow out the spinal cord by putting air to the root of the tail. The cord shoots out and the turtle goes dead limp RFN! It's like magic.
I then hit the carapace joint and skin out around the carapace and remove the bottom plate then take out the neck, legs and dump the waste. I then snip the carapace inner bones and strip out the backstrap. I personaly tim out all the yellow fat as on our snappers here it is a strong swampy taste.
I soak the meat in salt water for 24 hours and then bread and deep fat fry. Good eatin'!
