Our resident Indiana Canada Geese are a substrain called the Indiana Maximus. They weigh over 20 lbs!!! So... they ARE bigger then hen turkeys!!
We cook them by filleting the breasts out, and throwing the rest away. Cooking it in a crock-pot till it falls apart and smothering it in BBQ sauce.
I'll bet it'd make great jerky too. That's what I'll do with the next one I kill. Partially freeze the breasts, slice them thin on the slicer, and make jerky. Squealy, you in?

I've had smoked goose breast that was pretty good. Don't know how the guy did it, and he's since passed away. I do the same as Jabba- filet out the breast meat and toss the rest. The jerky might be interesting. . Every other method I've heard of and tried for cooking geese was not very good. I quit hunting them because I don't want to eat them.

Had very good & very bad, same with duck. But I do not know the secret to very good other than very good always had sourkraut but I do remeber a bad goose that had sourkraut too.

One year I cooked a goose for X-mas and all I can say is that a trip to the chinesse food shop was conducted instead of eating it.
You know the christmas goose.

Maybe your new Fox's will like them better than phasants? or rabbit's lol. Turkey's should be good Fox dinners to.

I make about 5 pounds of goose jerky a year. I like the pepper flavor that I marinade the meat in before I put it in the dehydrator. As far as cooking ... I marinade the meat for a couple of hours in Teryaki sauce then roll it up into a little (maybe 2") package and wrap a piece of apple smoked bacon around it .. tooth pick the thing together but them edge up in a baking pan and bake @ 375 to 400º until cooked ... (maybe 30 minutes or so).... serve it up with some home fries and corn ... and you've got a feast...

Jabba One year we had one hit and it fell right into the side of my friend. He had quite the bruise on his side for about 3 weeks. I think it was a kamikaze goose.

Actually Brantis Canadensis but to cook them cut all the meat off the bone and put it in a dutch oven. Pour 2 cans of beer over the meat and put over the coals with a good heap on top and let cook for 4-6 hours... Good eating!

2M's ... I've had goose that way... it's really good ....
I also like it slow cooked with BBQ sauce poured all over it ... Another way I like it is like a venison stew but instead of venison, you put goose in it.
