I normally try to use or freeze pork right away. Bought a bunch of meat on the 20th. Sell by the 25th. Today is the 24th. I wasn't paying attention and waited 4 days. The meat has been in the ice box in it's standard styrofoam/saranwrap. And of course I've got a bloody/water mess Anyway, there's a fairly strong oder like sulfur. I don't know if this is just blood and air or if the meat has now gone bad. Color wise, it has got a little pale - of course that can be just because it was in the juices. I've had some pork sausage do that after several days one time and threw it away because it was only a pound. This is quite a bit more. Thoughts?

Cook it and enjoy, by the way hospital emergancy rooms are packed during the hollidays.

If it still stinks after it's cooked & you gag on the 1st bite throw it away

Well let me let you in on an old Butchers trick. It's aged well now. Wipe it down with vinegar. The light acid will take any bad smell out. May even marinade it before cooking and cook it to 185 degrees check it with a meat thermometer.

If you cook it to 185 degrees, like Jim says, and keep it at 185 for 5 minutes or so, you'll kill off anything bad in there. What it'll taste like? I dunno- but, cooked like that, it won't kill you.

I ran to the grocery store for some red pepper (because you can't fry squirrel without red pepper) and asked the butcher. He said the meat will naturally do that due to the type of wrapping it's in. Sounds like it will be fine.

No Red if it smells now

I don't know. I have about 20 pounds of pork in the freezer.
