Apple Pandowdy
In an 8 inch cast iron skillet melt 1/3 stick of butter and sauté 6 apples, cored and thinly sliced Add 1/3 cup sugar, ½ teaspoon cinnamon and a pinch of nutmeg Cook slowly until sugar is melted and apples begin to soften In the meantime mix 6 large eggs, ½ teaspoon vanilla, 1 cup flour and 1 cup milk. Pour the liquid over the apples Bake for 20 -30 minutes at 375 degrees until puffed and done in the center.
Serve with warm maple syrup poured over,
