Well I came home from work tonight tired and cold. Been raining all day and so everyone decided to go shopping all day. Plus I was hungry. Looked around and nothing. Wife even gave up and decided she was going to McDonald's So I went looking and came up with this and she LIKED it. Fairly large sauce pan. 4 cups of water 1 teaspoon of salt 1 teaspoon of black pepper 1 teaspoon of Chile powder 1 teaspoon of natures seasoning 2 fresh eggs 4 cups of brown rice 1 cup of shredded chicken ( had this in the freezer left over from a chicken we cooked in the Crockpot that was a bit on the tough side but not when done in the crock pot) Bring the water in the sauce pan to a boil Add all the spices Add the chicken Add the 2 eggs stir till its all mixed good while boiling Add the 4 cups of rice Bring to a boil again and then turn the burner down to low and simmer for 15 minutes. Put in a bowl and pour some duck sauce (sweet and sour sauce with peppers and chile's) and wait for the duck sauce to soak in and then eat. Wife don't like rice but she did like this one and said it was both good and filling.

I wish I would of had some left over roast to slice up and throw in as I think it would of been good too. Shrimp also would of been good. Cook it while the water is boiling and then just add the rice. I'm just not much of a fish eater so that might not be something I would add though. The sweet and sour duck sauce is pinapple and viniger base but I also have a sweet and sour plum and vinigar base that would of worked very well too.
