Since I had to do a batch last night I thought I would go through the process of rendering lard/oil. I had done this many years ago with my Grandmother and these are her tips for good lard.
Heat your fat slowly, you don't want to burn any of it as that will taint the whole batch. It actually works best to start with a small batch in a big pot and add the fat as you get the oil bubbling.
Your cracklings shout come out about toast colored and not any darker for the best lard. Do NOT over heat, if the oil starts smoking you have ruined the whole pot, throw it out and start over. To get the maximum lard use a lard or fruit press to press the crackling. If you want cracklings for eatin' scoop them out first and set them on newspaper to drain. Then put them in a crock jar and seal them in with lard. As you bring the fat to a boil and start rendering the first oil to rise will stay oil the later rendering needs to boil at higher heat to solidify into lard. Bear oil is the best gun oil we have not that we can't kill whales. Bear lard is the BEST cooking lard you can get, period.

I still have a pint of Sperm Whale oil that a guy gave me a few years back. He had found a barrel of it in some warehouse up on the northwest coast about 20 years ago and had been hording it but offered me a pint as he says it makes the best patch lube there is. I just wonder how old this stuff is. He says it had been stored for years before he found it but was still fresh as could be.

Ah I trimmed your stew meat for free and took the waste fat for lard. I combined it wiht MY hog fat and now YOU want 1/2???
