Liver and onions
Now I really like liver and onions at deer season but I really really like this.
Saute onions in frying pan with what else virgin olive oil Add pre-roasted garlic or in camp perhaps garlic powder
Slice the liver in 1/4 " slices Fry on low heat until liver is cooked all through - DO NOT OVERCOOK!!! Best to sample wine while cooking. Serve with one of several sauces. I really really like several of the New Orleans style hot sauces for this application. Several brands work very well. Tonight I have an inexpensive sauce made by Forrelli called 'Bufflao Wing Hot sauce (medium)'
Serve with a Merlot. I prefer an inexpensive dinner wine. Tonight it was an inexpenisve Australian -- Yellow Tail merlot. BTW, Shiraz works well also as does several other reds.

dakota- You can have my share. I remember i n the Army that I could smell the liver cookin far away and that is where I stayed, far away!

to bad you don't know anyone who knows how to cook heart and liver. It really is good.

Dakata I like Liver & Onions about once a month, I slice up two Onions for the skillett and start them cooking, Then lay the liver over the Onions and pour in Tomato juce or V8 what ever I have, cover & cook to my likeness. I think it's great eating myself!!

Liver! That's part of the gut pile for me... But I always did bring the heart out. I like to pickle the heart... mmmm good...

I'm just sort of a liver eatin' guy... Fresh from the deer, yum yum. I really like fresh liver, but if you put it in the freezer for a week all the good is gone. Best I ever had was fresh Buffalo liver with onions and corn bread and smashed taters.

Best I ever had was fresh Buffalo liver with onions and corn bread and smashed taters. He ain't kiddin' guys what he says fresh from the deer he means raw!!!!!!! I've seen him chowin' down on raw liver!!!!!!! I like mine medium to medium rare myself.

Over cooked liver is the reason people don't like liver, IMO. Also as 2m said - fresh is best. Don't freeze it, eat it.
