Also Donnie, beef, venison, pork are all done the same way so whatever recipe you find for one will work for the other.

Are you asking how to can it or how to prepare it after it's canned?

I'm lookin for recipes to actually can the meat. We are allowed 4 deer tags per day here (season opens in Sept and ends Jan 3) and I want to put away a bunch of venison this fall. Aside from freezing and jerking I want some other ways to preserve it.

You won't/can't go wrong canning a bunch of it!!! The next time I'm home I'll get mom's recipe and post it for ya. I know like Bill said it's all pretty colse no matter what type of meat but a few added things always make something taste extra good!!!!!

Thanks DD! thats kinda what I was thinkin too. Everyone has thier own little tricks that make a lot of differance in the end product!

All I do is pack a jar, get out ALL the air, add a teaspoon of salt, close the lid sort of loose and pressure cook it for 90 minutes @ 15 psi. After the lids seal as they cool I tighten them up just a hair. That's it.

Thats all I ever did too Jabba. I always figured that I could add other things when I opened it up to eat. Course when I went duckhunting with my uncle when he was still alive it wasn't unusall for him to pull out a jar of canned venison and slop half of it in a couple plates and hand it and a fork to me to eat for dinner. It makes for a great anytime meal.

It's HEAVY food too. All meat, NO fat. A pint will feed two guys easy.
