D-D I like the doves breasted out then I take each little dove fillet and slice it to form a pocket. I add a piece of jalepeno pepper into each then wrap in bacon and pin with a toothpick. Put them on a hot grill and cook til done. 10-15 of these and a couple good cold beers really seals the deal on a day well spent in the dove field!

Cabela's sells a meat tenderizer that you feed the meat into and it flattens it out like a cutlet or like its been beaten with a meat hammer. You just feed in a half a bird breast and crank it and it does all the work for you. Anyway what I like to do is to run them thru the tenderizer a couple times until their nice and flat. Then I take a good skillet and put in some Olive oil and then roll the dove breasts in flower, salt and pepper and when the oil is hot drop them in the pan and brown them. Then I take them out and put them into a crock pot along with a couple cans of mushroom soup and put the crock pot on low and go to work. You can also add a couple potatoes along with the breasts. When you get home from work its nice and tender and juicy and ready to eat.

Bill, I think by the time you get done taking a wizz a 1/16 inch thick piece of dove meat will cooked...
