The guys that left me home from the Antalope trip felt sorry for me and brought me some antalope sausage. MMMmmmmm I found out that their using one of the big Cabela's dehydrators to dry it and when its done it looks to be about the size of your trigger finger. (Mine are fairly thin) Half inch roap. Man that stuff is good. I got to get me a dehydrator. Don't need a smoker, just add liquid smoke and spices to the meat and then stuff the cases and dehydrate it. I could live off that stuff. Course it gives you bad breath and gas but who cares. Elk would be awsome that way and so would Deer. I think I'm going to have to try it.
